Cookie Perfection: Date & Cacao Cookies

Cacao has been put up on a pantry pedestal in my kitchen, and I’m going to take a minute to sing her praises. She’s loaded with antioxidants, topping Goji and Acai berries for potency, packed with happy hormone releasing neurotransmitters to elevate your mood and a beautiful boost of magnesium, an excellent mineral for mental clarity and happy, healthy hearts.

Made in an attempt to keep the ‘gimme everything that contains sugar’ cravings at bay, these sweet things are completely gluten-free, refined sugar-free and dairy free. A pretty match for your afternoon coffee and a sweet addition to any lunchbox.


Cooking with Cacao

Ingredients:

200g almond meal

4 tablespoons melted organic coconut oil

2 tablespoons maple or rice malt syrup

1 teaspoon organic vanilla extract

5 fresh medjool dates, pitted

1/2 teaspoon baking powder

2 tablespoons raw cacao powder

 

Make Magic:

Preheat your oven to 180 degrees.

Add all ingredients to a medium-sized bowl and combine. Be sure to break up the dates with your hands so they get worked through the mixture. If you can roll the entire mixture into a big ball, you’re ready to rock.

Roll tablespoonfuls of the mixture into balls and flatten into discs. Place them a few centimetres apart on a baking tray. Bake for about 15 mins or until golden.

Those sweet, juicy medjool dates and almond meal really boost the fibre content keeping those tummies full. By using maple or rice malt syrup you avoid the sugar craving cycle. No animal products here honey, so feel free to share with your vegan pals. Delicious, organic coconut oil replaces the need for any dairy, so no inflammation or upset bellies. This is one clean cacao cookie!
